What Is FIFO?
FIFO — First-In, First-Out — is an inventory rotation principle that ensures the oldest stock (first received) is sold before newer stock. In food retail, this is critical: it prevents products purchased earlier (with earlier expiry dates) from sitting at the back of the shelf while newer stock gets sold first, causing the older products to expire unsold.
FIFO is mandated in food safety regulations across the US (FDA Food Safety Modernization Act), the UK (Food Safety Act), and throughout the EU. Non-compliance can result in formal enforcement action, fines, and in serious cases, criminal liability.
Why Manual FIFO Is Broken
